Sunshine Breakfast Bowl

Serves: 1

Ingredients: 

1 organic hard boiled egg
1 handful of alfalfa sprouts
1-2 tbsp mashed sweet potato
8-10 Coconut chips
1 handful arugula
1 tbsp sesame seeds
2 tbsp olive oil
1 tbsp lime juice
Himalayan sea salt
 

Instructions:

Place a handful of arugula into a bowl. Layer the rest of the ingredients on top. Drizzle with olive oil, lemon and sesame seeds. Sea salt to taste.
